We are the Gould-Knights. We love a great cup of coffee and are quite partial to each other.
Jon’s special interest has been coffee nearly his whole life (arguably leading to stunted growth in his tweens). After years working as a barista and coffee buyer, he started home-roasting in 2017, using an iron skillet over a charcoal grill, then quickly upgraded to an air popcorn popper. He kept studying and graduating his roasting methods over time, until joining the Buckman Coffee Factory in 2026. Jon is in love with the process of sourcing, roasting and brewing, and delights in being part of this community. Seriously, he loves talking coffee. Reach out and ask him questions. (Go ahead.)

Core Blends
Elven Light is a Single Origin Peru roasted light enough to skim above the snow without sinking but strong enough to perhaps provide a slight tingle in the fingers. With notes of white tea, pine nuts, and lime zest.

Second Breakfast Blend is a cozy, fruit-forward medium roast inspired by hobbit tables and slow mornings. With notes of toasted oats, maple sugar, wild berries, and Stone Fruit, this cup is made for second helpings.
Crafted from a rotating blend of seasonal varieties sourced from Africa, South America, and Central America, this brew offers a layered and balanced cup that evokes a full table in a cozy hobbit hole, piled high with scones and plenty of jam.

A Single Origin coffee from Ethiopia. This region makes up the core of my Second Breakfast Blend and is my favorite region for growing coffee! Typically, Ethiopian coffees Shine with tea like floral notes when roasted light and jammy fruits like blueberry and plum when roasted dark. I once had a dark roasted Ethiopia that slammed with juicy and sweet blueberry pie notes and ever since I have been chasing the dragon that is this blueberry pie in a cup! (hint, get some dried blueberries and pop one in your mouth before you take a sip of this, you won’t be sorry!)
